Baked Omelet

My mom has been making this for years, and it is an oft-requested dish at brunches and breakfasts. I made it while my nieces were visiting. The youngest even overcame her food “allergy” (an aversion is more like it) to eggs for this dish. 🙂

Baked Omelet

4 slices bacon
1/2 lb sausage
2 T bacon grease
1 tsp baking powder
1 tsp salt
4 T all-purpose flour
2 c milk
6 eggs or 1-1/2 c. egg substitute
1/2 lb Velveeta cheese

Preheat oven to 350.

Cook bacon, and set aside. Reserve grease.

Brown sausage. Drain. Set aside.

Blend bacon grease, baking powder, salt, flour, milk, eggs, and cheese in a blender until smooth.

In a greased 9 x 13 baking dish, add sausage, then bacon, then the egg mix.

Cover with foil and bake for 30 minutes. Remove foil, and bake uncovered until brown (approximately 15-30 minutes).

Cut into squares and serve.

Yield: 20 squares
